Boiling and cooling

For hygienic reasons, the water is boiled so that it is bubbly. This should make it germ-free and lime-free. Boiling hot water is not suitable for the preparation of Japanese green teas, however, as it has a negative effect on the taste and is completely unsuitable for high-quality green tea. Therefore, the form of preparation - in particular the temperature of the infusion water - should correspond to the individual type of tea. This is how you achieve the optimum from a taste and health point of view, as the corresponding substances from the tea leaves can pass into the infusion water.

Soft water

In contrast to the large tea-growing regions of Japan, the green tea that KOGACHA selects comes largely from significantly smaller cultivation areas, which are geologically determined by the pronounced mountainous landscape of Kyushu. The teas listed here have a high rarity value in Japan and are considered to be top-class teas due to their distinctive taste, unique umami and aroma. In order to fully enjoy the fine nuances that these teas offer, we recommend using the softest possible water. Various filter systems are available for this purpose. B. in combination with activated carbon and ion exchange, can convert hard drinking water into soft.


Preparation and the so-called "golden drop"

The preparation of Japanese green tea is originally based on ceremonial rites with a spiritual claim. In connection with this idea and because of the fact that the tea from KOGACHA is of particular quality, we present our preparation recommendations below, which we worked out together with the tea farmers. It is said that the umami essence of the entire tea is concentrated in the so-called "last, golden drop" that finds its way into the teacup. "In this very last drop, the effort and the reward of our work manifests itself", say the local tea farmers.


Storage instructions

Store closed packs in a cool, dry place and avoid direct sunlight. On hot summer days, it makes sense to also store the pack in a resealable bag and store it in a cool place. Before enjoying tea, make sure that the pack reaches room temperature, otherwise condensation can form on the inside.

Once opened, the contents should be stored in a separate container in a cool, dry place and used up as quickly as possible.
