Organic Yame-Sencha-Tea

Okuyame is located in the midst of evergreen mountains at 600 meters above sea level east of the YAME district in Fukuoka Prefecture. The mountainous location explains the cool temperatures and there is regular snow there even in winter.

 

Ideal conditions to grow organic tea leaves

These climatic conditions allow the tea plant to thrive in peace without being damaged by pests that are unable to survive at these temperatures. Accordingly, the use of pesticides is not necessary. These are ideal conditions for growing organic tea leaves.

 
 

In order to obtain high-quality tea leaves, tea farmers attach great importance to the health of their tea plants:

Here too, a traditional cultivation method finds its perfection when the tea farmers use handpicked fermented organic fertilizers, called "Bokashi fertilizers", to help their tea plants grow healthy in a natural way. Every stage of the plant's growth is meticulously monitored and adapted to the specific weather conditions of each season in order to achieve the highest standards.

Before pouring:

Shape of leaves: needle-shaped, interspersed at times with pulverized tea leaves
Color: very dark, almost black green
Fragrance: subtle green tea aroma

After pouring:

Color: light green, referred to by the Japanese as “rice seedling green”
Fragrance: a sweetish mild aroma
Taste: a distinct umami note with a sweet finish

Fragrance: soft and subtle; exudes the fresh scent of rain-moistened grass

Fragrance: rather reserved and restrained; a hint of green tea aroma
Taste: distinctive and firm; clearly accentuated and unmistakable
